CHICKEN SAUTE DIJON
1 chicken (breasts) or pieces
4 tbsp. (1/2 stick) butter
1 onion, chopped
1 clove garlic
1 (13 2/4 oz.) can chicken broth
2 tbsp. DiJon mustard
1/2 tsp. thyme
Wash chicken. Melt butter, saute' chicken until brown. Remove chicken, pour off all but 2 tablespoons of fat. Add onion and garlic and saute'. Add broth. Blend in mustard and thyme. Return chicken, cover and simmer 30 minutes. Remove chicken, serve on platter (sauce as gravy). Simmer sauce again until thick.
