Beef Stroganoff

Start off with a couple good beef steaks (cutting steaks off of a roast are a cost effective choice). Cut the steaks into bite size chunks and fry them up in a pan. When the beef is about half cooked toss some chopped onions and garlic (if desired) into the pan. When finished put the beef and onions into a pot that can hold at least 2 quarts. Add about a quart of water as well as salt, pepper, and any herbs you thing will go well. Mix in about a cup or two of sour cream. While the ingredients simmer get a cup and fill it with a few tablespoons of corn starch (flour works too, but I prefer corn starch) and add some water to the starch. If you put the corn starch directly in the pot it will clump up. Mix the corn starch solution into the pot and stir well. Bring the mixture to a boil and then let it cool. This will cause the sauce to thicken much like a gravy. Serve the sauce on some rice, mashed potatoes, or noodles. Egg noodles are my starch of choice.
